Kale Chips

I try to incorporate dark green leafy vegetables into my diet everyday and here is a fun way to do it!  They are called Kale Chips.   I use dinosaur kale because it’s a little bit thicker and make for better chips.  Some of the benefits that Kale provides are:

  • Kale eases lung congestion and is beneficial to the stomach, liver and immune system
  • It contains lutein and zeaxanthin, which protect the eyes from macular degeneration
  • It also contains indole-3-carbinol, which may protect against colon cancer
  • Kale is an excellent source of calcium, iron, vitamins A and C, and chlorophyll

These chips are great to snack on.  They are a little more fragile than a potato chip but have that same great crunch.  These are also fun for kids to make!  If they are involved with making them, they are more likely to eat them.  So here are the directions:

1 bunch of kale, 1 tablespoon extra virgin olive oil, and 1 teaspoon sea salt

Preheat oven to 350 degrees.  Line a cookie sheet with parchment paper.  Rinse the kale and dry throughly.  Grab the stem in the middle and slide your fingers up and take the leaves off.  (That part is actually fun to do!)  Then tear the kale into 2 inch pieces.  (I like to have it bigger like that because they will shrink when cooking)  Drizzle the oil over and make sure to coat all the pieces, then sprinkle the salt on.  Bake for 10-15 minutes, till edges are brown.

This is what it should look like before you bake them.  I actually don’t have a picture of what they look like when they come out because my camera battery died and I ended up eating them all!  Haha!  They’re that good.
