Super delicious and nutritious coffee creamer!

This Vanilla Cardamom Almond Coffee Creamer is so creamy, delicious, and nutritious that you’ll want to break up with your store bought coffee creamer right away.  Don’t even give it the old ‘its not you it’s me’ crap either.  They’re going to know it was them, and that’s okay, because they’re getting used to it!

Okay, I’m going to admit this but I am one that used to buy the store bought coffee creamers that some didn’t have any milk or cream in them at all.  I loved my coffee and the taste of these creamers and couldn’t find anything to replace all the fun fabulous flavors they started coming out with!

Cardamom is the bomb!

It’s when I traveled to Europe last year and had to go without for 6 weeks because the coffee shops didn’t offer the sugar laden coffee syrups that I was able to get in every coffee shop in America.  I thought oh I’ll just ask for cream and I’ll put lots of sugar in it, the raw kind of course!  But when I would ask for cream they would look at me with such confusion and say ‘do you mean milk?’  I’m like ‘no, I mean cream.’  So then a couple of them pulled out whipped cream from the fridge and point to it while raising their shoulders as if to say ‘you mean this?’, with such disgusted looks on their face.   Hahaha.  I actually thought of saying ‘sure’, haha, but instead I would shake my head no and return the same disgusted look as they were giving me…awkward…

So I would just have them add some milk and I added some sugar to it, lots at first, and then less and less because it was tasting too sweet.  My taste buds were changing and I was weaning off from the oil coffee creamers I was so used to having.  Wahoo!  That part I felt great about!  Well then I came home and still added milk to my coffee.  The only thing is, I was adding fat-free milk to it because the whole milk wasn’t tasting good in it.

I thought, I need to do something to just make my coffee way more nutritious.  I had tasted store bought almond milk before and just didn’t like it.  Plus it had binders and emulsifiers in it and if I’m drinking that, well I might as well go back to the cream-less coffee creamers!

So I finally thought, how can I make almond milk at home and make it even more tasty and beneficial.  I need it creamy and flavorful people!!  I know my taste buds and I know what. they. like.

May I introduce to you… Vanilla and Cardamom Coffee Creamer.  This marriage is working out so well and in no need of therapy…yet.  😉   Well cardamom can be a little sassy sometimes, but I think it can because it has lots of health benefits!

A nourishing coffee creamer!

When you eat cardamom, you are nourishing your digestive tract.  Sweet!  Cardamom also helps with detoxification, depression, urinary tract, blood pressure, blood clots, and inflammation.  Um yeah, I’ll add that to my coffee thank you very much.

Okay let’s get you making your own almond milk.  You’re going to need a good blender and a nut milk bag.  I use the Zimtal Nut Milk Bag and bought it off Amazon.  You get lots of the milk out of it.  You can use a cheese cloth doubled or a dish rag if you don’t have one but I highly recommend you get one!

Ingredients:

  • 1 cup of raw organic skinless almonds (or just take the skin off after you soak them, careful though they get slippery!)
  • 2.5 cups filtered water + more to soak in
  • 1 teaspoon vanilla extract
  • 1 tablespoon of powered cardamom (or more if you like) (just grind whole seeds if you don’t have powdered)
  • dash of sea salt

Directions:

  1. Rinse the almonds really really good.
  2. Then put the rinsed almonds into a jar and fill with filtered water until they are completely immersed and cover with a towel.  Let them sit on the counter covered for at least 12 – 24 hours.
  3. When done soaking, runs the almonds in a colander for a good minute, rinse really well.
  4. Put the plumped up almonds into a blender with the 2.5 cups of water, vanilla extract, cardamom, and sea salt, and blend for a good 2 minutes.  Get it really smooth and pulverized.
  5. Place your nut milk bag into a pitcher and pour the almond milk in.  Close the top and start squeezing away.  (can you believe how white it is?!)
  6. Then pour it into a jar with a lid and keep in the fridge for 3-4 days.

It is creamy and delicious.  It may separate while in the fridge, but just shake it up and it will mix right back up.

If you don’t want to add the cardamom to the whole jar you don’t have to.  You can just add it into your coffee with the almond milk.  You can also try adding cinnamon.  That is delicious too!
