Started making holiday cookies today! Awww my favorite time of year to bake. These cookies are full of buttery richness, topped with gourmet jam that adds just the right amount of flavor for a melt in your mouth experience with every single bite.
Recipe adapted from 1 Dough, 100 Cookies
Ingredients:
- 1 cup butter, softened
- 3/4 cup organic whole cane sugar (Please try to use a more natural sugar like this kind which will add nutrients that white sugar won’t because it has none)
- 1 egg yolk, lightly beaten
- 2 teaspoons vanilla extract
- 2 1/2 cups spelt flour (I like to use spelt flour due to it’s higher fiber and protein content)
- pinch of salt (Make sure to use not too little and not too much. Salt helps to bring out the flavors and balance them out.)
- 4 tablespoons of your favorite jam (I used a blueberry & orange with black currant wine & apple brandy from Big Spoon Jam. If you are not in the Seattle area, then have some of these jams sent to you. They are so yummy! All natural ingredients.)
Directions:
- Preheat oven to 375° and line 2 cookie sheets with parchment paper.
- Put the butter and sugar in a bowl and mix well. Then add in the egg yolk and vanilla extract and mix all together. Add the flour and salt and stir until completely combined. (Or if you have a stand up mixer just throw it all in and mix.)
- Scoop out a tablespoon of dough and shape into a ball and place on a cookie sheet. Use your fingers or your thumb and create a hole in the middle of each ball and fill it up with some of your favorite jam.
- Bake for 12-15 minutes. Shorter time for softer texture and longer time for a crispier texture.
Makes about 25 cookies.
