When people say they don’t have time to cook, well here is the recipe for them. I got this recipe from the World’s Healthiest Foods book and it is so easy. This preparation is quick broiled so you will need a stainless steel skillet or a cast iron pan. Make sure the handles on the stainless steel skillets are stainless steel as well. If you don’t have one of these, well right now would be the perfect time to invest in one. Macy’s always has great deals around the holidays, especially after the holidays. Cast iron pans I usually always find good deals on. And I highly recommend purchasing one of these and getting away from the teflon non-stick pans since they leach all those chemicals into your food.
Salmon with a Ginger Mint Salsa…
Ingredients for salmon:
- 1 pound wild caught Alaskan Salmon fillet (no farm raised or dyed please), cut in half
- 2 teaspoons + 1 tablespoon fresh lemon juice
- sea salt and black pepper to taste
- 2 tablespoons extra virgin olive oil
- 1 medium clove garlic
Directions:
- Preheat the broiler on high and place your stainless steel or iron skillet under the heat for about 10 minutes to get it very hot. Place the pan about 5 to 7 inches from the heat source.
- While the pan is heating, chop or press garlic and let it sit for 5 minutes to allow the health-promoting allicin to form.
- Rub salmon with 2 teaspoons fresh lemon juice, salt and pepper. You can broil with the skin on, it will just take a minute or two longer but the skin will peel right off after cooking.
- Using a hot pad, pull pan away from heat and place salmon on hot pan, skin side down. Return to broiler. It is cooking rapidly on both sides so there is no need to turn over and it is usually done in 7 minutes. Salmon will flake easily when tested with a fork when it is cooked. It is best when it is still pink inside. It will still cook a little when you take it out so you want to have it still pink inside when you take it out.
- Drizzle with extra virgin olive oil, 1 tablespoon lemon juice, garlic, and salt and pepper to taste.
Salsa ingredients:
- 1 diced tomato
- 1/2 cup minced green onion
- 1 teaspoon minced ginger
- 2 teaspoons minced fresh mint
- 1 teaspoon fresh lime juice
- sea salt and pepper to taste
Combine all together and spread over salmon.
